Aromatic chicken curry

INGREDIENTS:

¦ 30ml (2 tablespoons) dry

breyani mix

¦ 15ml (1 tablespoon) curry

powder

¦ 1 medium chicken cut into

portions

¦ 60ml (4 tablespoons) oil

¦ 250ml cream

¦ 1 can (410g) mixed vegetables

¦ 1 CAN (410G) ALL GOLD CHILLI

PEELED & DICED TOMATOES

¦ salt and freshly ground black

pepper

¦ fresh chopped coriander leaves

INSTRUCTIONS:

Grind the breyani mix and combine with curry powder.

Rub the mixture into the chicken pieces.

Heat oil in a large heavy-based saucepan and brown the chicken pieces.

Then add mixed vegetables and cook for 2 minutes.

Add cream and simmer for 10 minutes.

Add the peeled and diced tomatoes.

Season with salt and freshly ground black pepper to taste.

Cook on a low heat for 30 minutes until the chicken is cooked through.

Garnish with fresh chopped coriander and serve over rice.
