ASPARAGUS, BACON AND CHEESE

Ingredients you will need

500g penne pasta

500g asparagus, trimmed and chopped coarsely

5 rashers of bacon, sliced thickly

Garlic, crushed

50g butter

½ cup finely grated parmesan cheese

½ cup finely grated mozzarella cheese

½ cup cream

¼ cup flat-leaf parsley, chopped coarsely

Instructions

Cook pasta according to the instructions on the packet. In the meantime, boil, steam or microwave asparagus until just tender, and drain. Cook bacon in large, heated, non-stick frying pan, stirring until crisp. Add garlic, and stir until fragrant. Place drained pasta, asparagus and bacon mixture in a large bowl with butter, cheeses and cream, toss gently to combine. Serve pasta sprinkled with parsley.

Move! Tip You can add more bacon if you would like the dish to taste a little meatier. Remember always to add oil and salt to the boiling water you use for the pasta, so that the pasta does not stick together.
