ATCHAR CHILLI BITES

SERVES 4

  •  3 cups (750ml) flour
  •  5g (½ packet) yeast
  • 1 cup (250ml) water
  • 2 tablespoons (30ml) oil
  • 1 teaspoon (5ml) salt
  • 1 ½ cup (375ml) mango atchar
  •  Oil for deep frying

Mix together the flour, yeast, salt,

oil and water to make a soft dough. Knead the dough for 5-10 minutes until it becomes smooth and elastic. Let the dough rise in a warm place until it has doubled in size. Cut the dough into pieces the size of a golf ball. Flatten each piece and place a teaspoon full of atchar in the centre of each. Pull up the sides of the dough to enclose the filling. Pinch well to seal. Fry the filled dough balls in hot oil for 3-5 minutes until cooked through. Drain on kitchen towels or newspaper and serve.
