Bread and butter pudding

Serves 6

Power setting: Full

8 large slices white or brown bread, crusts removed

100 g butter

75 g raisins or mixed dried fruit

4 eggs

45 g (3 tablespoons) castor sugar

500 ml (2 cups) milk

5 ml (1 teaspoon) vanilla essence

Spread the butter on the bread and cut each slice in half diagonally. Arrange the bread in layers in a pie dish, sprinkling raisins between each layer. Beat the eggs and sugar, stir in the milk and vanilla essence, and mix well. Pour mixture over the bread. Place the pie dish into a shallow dish containing water, and put them into the microwave. Cook for five minutes. Leave to stand for five minutes. Turn the dish and cook for a further five minutes, or until the custard sets in the centre. Place the pudding under a preheated grill to brown and crisp the top, if you like. Cut into wedges to serve.
