Cheese scones

Makes 8–10 scones

Serve these savoury scones lukewarm with grated cheese or a savoury spread of your choice.

500 ml (2 cups) cake flour

15 ml (1 tablespoon) Royal Baking Powder

2 ml (2 teaspoon) salt

250 ml (1 cup) grated Cheddar cheese

60 ml (1/4 cup) margarine

1 egg 125 ml (1/2 cup) milk   Method

Preheat the oven to 200°C. Grease a baking tray and set it aside. Mix the flour, Royal Baking Powder, salt and grated cheese together. Using your fingers, rub the margarine into this mixture until it looks like coarse breadcrumbs. Mix the egg and milk together, and add to the dry ingredients. Mix lightly to form a soft dough. Turn out onto a working surface sprinkled with a little flour. Pat the dough out lightly with your hands until it is about 2 cm thick. (Do not knead the dough.) If the dough is sticky, sprinkle a little flour on top. If you’ve got a scone cutter, dip it into some flour and then cut out round shapes. If not, use a sharp knife. Dip the blade into flour and cut the dough into squares. Arrange on the baking tray and bake for 12–15 minutes or until risen and golden brown. Leave to cool slightly and serve lukewarm.
