Chicken breasts and avo

Serves 2

30 ml (2 tablespoons) lemon juice

1 ml garlic, crushed

salt and pepper

15 ml (1 tablespoon) onion, chopped

1 ripe avocado

1 green pepper, chopped

Preheat the oven to 200°C. Season the chicken breasts with lemon juice, garlic, salt and pepper. Arrange in an ovenproof dish and grill for five to seven minutes on each side until done. Cut the chicken into strips. Halve the avocado, remove the stone and cut the flesh into cubes. Mix the chicken strips, avocado, green pepper and onion together and serve.
