Chicken pilaf

Ingredients you will need

3 tablespoon margarine

1 onion chopped

1 garlic clove crushed

1 green pepper chopped

½ punnet (125g) mushrooms, chopped

2 chicken breasts, cut into blocks

1 cup (250ml) rice

2 cup (500) chicken stock

Instructions

Heat the margarine in a large pot and fry the garlic, onion and green pepper until soft. Add the mushrooms and chicken until cooked. Add the rice and fry for 2 minutes. Add the chicken stock, bring to the boil and let it simmer for 20 minutes until all the liquid is absorbed and the rice cooked.

Serve hot
