Chicken salad

Serves 2 or 3

2 cooked chicken breasts

salad leaves

2 tomatoes, cubed

½ cucumber, sliced

½ small ripe pineapple, cleaned and cubed

Dressing

30ml oil

30ml lemon juice

30ml chopped fresh parsley

salt and pepper

Remove the skin from the chicken and shred the meat with a fork or cut into thin slices. Mix chicken with the salad leaves, tomato, cucumber and pineapple cubes. Arrange on plates. Mix the ingredients for the dressing and drizzle over the salad. Serve immediately.
