Chocolate cream

Serves 6

105 ml (7 tablespoons) cornflour (Maizena)

80 ml (1/3 cup) sugar

1 ml (1/4 teaspoon) salt

30 ml (2 tablespoons) cocoa

750 ml (3 cups) milk 5 ml (1 teaspoon) vanilla essence   Method

Mix the cornflour, sugar, salt and cocoa together. Add 60 ml (1/4 cup) of milk and mix to form a smooth paste. Heat the rest of the milk and add to the cocoa mixture. Mix well and pour back into the saucepan. Bring to the boil over low heat and simmer, while stirring often, until thick. Remove from the heat and add the vanilla essence. Pour the mixture into a bowl and leave to cool. Refrigerate until ready to serve. Serve as it is or with ice cream.
