Classic samp with beans

Serves 8-10

500 ml (2 cups) samp

375 ml (1½ cups) sugar beans

2 litres water

1 large onion, chopped Salt to taste   Method

Wash the samp and beans, and soak overnight in enough water to cover completely. Drain well. Put in a pot and add enough clean water to cover completely. Bring to the boil and simmer slowly for three hours, adding more water if necessary, until soft. Add the chopped onion and salt to taste.
