CREAMY CHICKEN IN PESTO SAUCE

INGREDIENTS

¦ 60ml (4 tablespoons) oil

¦ 1 onion, chopped

¦ 10ml (2 teaspoons) crushed

garlic

¦ 15ml (1 tablespoon) minced

ginger

¦ 8 chicken pieces

¦ 1 can (410g) chopped

tomatoes

¦ 1 bottle (140g) red pesto

(sundried tomatoes)

¦ 250ml (1 cup) fresh cream

¦ 5ml (1 teaspoon) ground

cumin

¦ 5ml (1 teaspoon) ground

coriander

¦ Salt and freshly ground black

pepper

¦ 15ml (1 tablespoon) fresh

thyme, chopped

INSTRUCTIONS

Heat oil and fry onions, garlic and ginger until transparent. Add chicken pieces and cook until lightly browned.

Add tomatoes, pesto, fresh cream, cumin, coriander, salt and freshly ground

black pepper. Bring to the boil, then lower heat and simmer gently for 45 minutes.

Add fresh herbs and cook for a further 15 minutes. Serve over creamy mashed potatoes.

Ready-made pesto is available from most supermarkets on the same shelf as the readymade pasta sauces.
