Creamy melkkos

Serves 4

125 g (1/4 packet) spaghetti, broken into smaller pieces

150 g cake flour

5 ml (1 teaspoon) salt

60 ml (1/4 cup) sugar

1 litre (4 cups) milk

45 ml (3 tablespoons) margarine

3 ml (1/2 teaspoon) vanilla essence

cinnamon sugar, to serve

Cook the spaghetti in boiling salted water until cooked but still firm. While the pasta is cooking, mix the cake flour, salt and sugar with 250 ml (1 cup) of the milk until smooth. Heat the remaining 750 ml (3 cups) of milk until boiling. Stir 250 ml (1 cup) of boiling milk into the milk and flour mixture. Pour this back into the saucepan of milk and simmer gently over low heat, stirring often, until thick. Add the spaghetti and simmer for two to three minutes. Remove from the heat, add the margarine and vanilla essence, and stir until the margarine is melted. Serve in bowls and sprinkle each with cinnamon sugar.
