DEEP-FRIED CRAB CAKES

Ingredients you will need

6 crab sticks, flaked into smaller pieces

1 large Granny Smith apple, grated

¼ cup tarragon, roughly chopped

½ cup coriander, roughly chopped

1 large egg

2 cups breadcrumbs

Salt and pepper to taste

Oil for deep frying

Instructions

Mix all the ingredients (except the oil) together in alarge bowl.Using your hands, take a generous amount of mixtureand start shaping make small round cakes. Make surethe cakes are dense and firm.

In the meantime, heat a large saucepan with enoughoil for deep frying or heat oil in a deep fryer if you haveone at 180?.When all your shapes are ready, slowly drop them intothe oil and fry until golden brown on both sides.Take out and drain onto kitchen towels to removeexcess oil. Then serve.
