Livhuwani Dagada of Thohoyandou sent in these great recipes. Move! tested them and the result is a winter feast that is easy to make.

Easy chicken bake

Serves 6 – 8

8 chicken thighs or breasts

salt and pepper to taste

1 large onion, chopped

1 packet (60 g) onion soup powder

150 ml (1/2 cup + 5 teaspoons) mayonnaise

180 ml (3/4 cup) apricot jam

125 ml (1/2 cup) water

Preheat the oven to 180°C. Grease or spray an ovenproof dish. Arrange the chicken pieces in the dish and season with salt and pepper. Mix the chopped onion with the soup powder, mayonnaise, apricot jam and water, and pour over the chicken. Cover and bake for 30 minutes, remove the lid and bake for a further 30 to 45 minutes until cooked. Serve with rice and vegetables.
