Fish and rice bake

Ingredients you will need

1 cup (250ml cooked rice

1 egg, beaten

1 cup milk

500g smoked haddock fillets

2 eggs

Salt and peper to taste

1 cup cheese grated

1 teaspon (5ml) mustard powder

2 tablespoons (30) chopped fresh parsley

Instructions

Preheat the oven. Mix rice and egg together. Pour the milk into a pan and add the fish fillets. Bring the milk to boil and simmer gently until the fish is cooked. Remove the fish from the milk (keep the milk aside), flake the fish and mix with rice. Add the eggs to the milk, whisk lightly, and season with salt and pepper. Add the cheese, mustard powder and parsley. Pour the egg and the milk mixture over the rice and fish and mix well. Spoon the mixture into a greased ovenproof dish and bake for 30 minutes until slightly brown on top.

Serve with salad
