Fruity ginger pudding

Something sweet

Serves 4

2 large apples, peeled and sliced

2 large ripe guavas, peeled and sliced

45 ml (3 tablespoons) sugar

30 ml (2 tablespoons) water

45 ml (3 tablespoons) butter

60 ml (4 tablespoons) golden syrup

1 large egg

180 ml (1 cup) self-raising flour

5 ml (1 teaspoon) ground ginger

Preheat the oven to 180°C and grease an ovenproof dish. Heat the apple slices, guava slices, sugar and water and simmer on a low heat until cooked. Melt the butter and syrup in a saucepan and leave it cool. Whisk the egg and add it to the butter and syrup mixture. Sift the self-raising flour and ginger, and add to the syrup mixture. Add the cooled fruit mixture to the mixture, and pour into the greased dish. Bake for 35 minutes until cooked. Serve with custard.
