Liver bake

1 kg lambs liver, sliced into cubes

salt and pepper to taste

30 ml (2 tablespoons) vinegar

4 rashers of bacon, chopped

250 ml (1 cup) fresh bread crumbs

45 ml (3 tablespoons) margarine, melted

5 ml (1 teaspoon) dried parsley

Preheat the oven to 180°C and grease an ovenproof dish with margarine. Spoon the liver cubes into the dish, season with salt and pepper and sprinkle with vinegar. Sprinkle on the chopped bacon. Mix the breadcrumbs, melted margarine and parsley well and sprinkle over. Bake for 20 to 30 minutes until the liver is cooked. Serve on mashed potatoes with salad.
