Macaroni chicken bake

Livhuwani Dagada of Thohoyandou sent in these great recipes. Move! tested them and the result is a winter feast that is easy to make.

Serves 6

250 g (1/2 packet) macaroni

45 ml (3 tablespoons) margarine

125 g (1/2 packet) mushrooms, sliced

500 ml (2 cups) cooked leftover chicken, diced

1 can (410 g) condensed chicken soup

200 ml (3/4 cup + 4 teaspoons) milk

250 ml (1 cup) grated cheese

Preheat the oven to 190°C and grease or spray an ovenproof dish. Cook the macaroni in boiling salted water until cooked but still firm. While the pasta is cooking, heat the margarine in a pan and fry the mushrooms until cooked. Add the chicken and fry until warmed through. Add the chicken soup and milk, and stir to mix. When the pasta is cooked, drain well and mix with the chicken mixture in the pan. Pour into the greased dish and sprinkle with grated cheese. Bake for 20 minutes or until the cheese is melted and golden brown.

Serve with salad.
