Macaroni with spicy mince and white sauce

Serves 8–10

500 g macaroni

30 ml (2 tablespoons) oil

1 onion, chopped

2 garlic cloves, chopped

2 chillies, chopped

600 g lean beef mince

2 sachets (100 g) tomato paste

1 can (410 g) chopped tomatoes

1 sachet brown onion soup

500 ml (2 cups) water   Method

Cook the macaroni according to the step-by-step instructions above. While the pasta is cooking, heat the oil in a saucepan and fry the onion until soft. Add the garlic and chillies, and fry for one minute. Add the mince and fry until well browned. Add the tomato paste and chopped tomatoes, bring to the boil and simmer for five minutes. Sprinkle the brown onion soup powder over, add the water and stir. Meanwhile drain the pasta and add a little oil (see step 4). Leave to stand while the meat sauce is simmering. Cover and simmer gently for 30 minutes, stirring often, until the sauce is thick and fragrant. Mix the macaroni with the sauce, and pour into a suitable dish. Make the white sauce according to the step-by-step instructions. Pour the boiling-hot sauce over the pasta, spread evenly and sprinkle with grated cheese. Leave to stand while the cheese melts, and serve.

Tip

If you have an oven, make this pasta dish ahead, then leave to cool and bake for 30 minutes at 180°C just before serving.
