Meat curry with dried beans

Serves 8

250 ml (1 cup) dried beans

15 ml (1 tablespoon) oil

1 kg stewing mutton, cubed

1 large onion, chopped

10 ml (2 teaspoons) curry powder

15 ml (1 tablespoon) brown sugar

3 potatoes, peeled and cubed

250 ml (1 cup) meat stock or boiling water

250 ml (1 cup) frozen peas or mixed vegetables

80 ml (1/3 cup) brown vinegar

5 ml (1 teaspoon) salt Black pepper to taste   Method

Put the beans in a pot with cold water and bring to the boil. Simmer for 10 minutes. Remove from the heat and let the beans soak for one hour. Meanwhile, heat the oil in another pot and fry the meat until golden brown. Add the onion and fry until the onion is soft. Add the curry powder and cook for two minutes. Add the sugar, potato cubes, beans and meat stock or boiling water. Bring to the boil and simmer slowly for 1½ to 2 hours or until the meat is very soft. Add the peas (or mixed vegetables), vinegar and seasoning, and simmer for another 20 minutes. Serve with pap or rice.
