Mixed vegetable curry

Try this tasty vegetable curry which is great for the whole family at an estimated cost of R15.50 per portion it's great for your pocket too . Meat lovers can add beef or chicken for a meatier option ,

Mixed vegetable curry

30ml (2 tbsp)                           olive oil

1                                              onion, thinly diced

15ml (1 tbsp)                           crushed garlic

30ml (2 tbsp)                           tomato paste

15ml (1 tbsp)                           turmeric

15ml (1 tbsp)                           curry powder

10ml (2 tsp)                             cayenne pepper

30ml (2 tbsp)                           sugar

1 X 500g pack                         frozen mixed vegetables, defrosted (cauliflower, carrots, peas,

corn, beans)

salt and pepper to taste

250ml (1 cup)                          cream

1/4 cup                                    fresh coriander, chopped

30ml (2 tbsp)                           fresh parsley, chopped

4 cups                                     Spekko Royal Umbrella Jasmine Rice, cooked

  1. Heat the oil in a pan and add the onions and garlic. Sauté until translucent.
  2. Add the tomato paste and cook for a minute. Add the turmeric, curry powder, cayenne, and sugar stir until well mixed.
  3. Add the vegetables and stir to combine.  Season with salt and pepper to taste. Add the cream and bring to a boil. Bring down heat and simmer until cooked.
  4. Garnish with coriander and parsley and serve with the cooked warm rice.
