Open sardine sandwich

Ingredients

¦ 4 thick slices health bread

¦ 15ml (3 teaspoons) low fat margarine

¦ 4 lettuce leaves

¦ 1 ripe tomato, thickly sliced

¦ 1 avocado, peeled and sliced

¦ 2 cans (120g) sardines in water

¦ Rocket or micro herbs

Instructions

  • Spread bread with margarine.
  • Arrange a lettuce leaf on each slice. Place tomato slices on lettuce.
  • Top with sliced avocados; sprinkle with a bit of lemon to stop avocados from discolouring.
  • Separate sardines in half and place on avocados, garnish with herbs and serve immediately.

Move Tip: Use flaked tuna, shredded cooked chicken, or cold meats instead of sardines.
