oven baked Fish and chips

tired of greasy deep fried chips ? forget the deep fryer and try this oven baked fish recipe it works well with hake , snoek and angel fish fillets

Ingredients

6 fish fillets

½ cup flour

2 eggs

2 tblsp milk

1-2 bread crumbs

Zest of 1 lemon

Salt and pepper to taste

1-2 tblsp dried parsley

Method

Preheat oven to 200°C.

Grease and oven rack and put it over your oven tray.

Place flour on a plate and season with a little salt and pepper. Put bread crumbs on a plate and season with salt, pepper, lemon rind and dried parsley. Whisk eggs and milk together in a shallow dish.

Dip fish into flour, then egg mixture and finally the breadcrumbs. Place on prepared oven rack. Back until golden and crispy.

*Tip: use crunchy stale bread to make your own bread crumbs

Serve hot with chips and salad
