Pan-FRIED FISH WITH CHILLI HERB OIL

Ingredients you will need

¼ cup italian parsley, chopped finely

Juice and grated peel of 1 lemon

1 chilli, chopped finely

4 teaspoons olive oil

Garlic

Pinch of sugar

4x 200g firm fish fillets (salmon is ideal, as it goes very wellwith chilli)

Instructions

Mix the parsley, lemon, chilli, olive oil, garlic and pinchof sugar together in a small bowl.Brush a little herb oil mixture over each fish fillet.Heat a medium-sized, non-stick frying pan.Pan fry the fish for about 5 minutes on each side, oruntil cooked through.Place the remaining herb oil in a pot and heat through.Drizzle the fish fillets with herb oil and serve.

MOVE! TIP You may serve the fish with rice, creamy mash,baked baby potatoes or just a simple salad.
