Pasta with chunky tomato sauce

Serves 6

A great low-fat dish to make with overripe tomatoes.

Sauce

10 ml (2 teaspoons) oil

2 onions, chopped

2 sachets (100 g) tomato paste

10 overripe tomatoes, skinned and chopped

10 ml (2 teaspoons) dried basil

15 ml (1 tablespoon) Worcester sauce

salt, pepper and sugar, to taste

60 ml (1/4 cup) fresh parsley, chopped

Heat the oil and fry the onions until soft. Add the tomato paste, chopped tomatoes, basil, Worcester sauce and seasonings, and bring to the boil. Simmer over low heat for 20 minutes until thick and fragrant. Adjust the seasoning and spoon the sauce over any pasta of your choice.
