Pork and veggie stir-fry

INGREDIENTS:

¦ 60ml (4 tablespoons)

oil

¦ 500g pork shoulder

chops

¦ 1 red pepper,

julienned

¦ 1 yellow pepper,

julienned

¦ 1 green pepper,

julienned

¦ 1 carrot, julienned

¦ 1 onion, sliced

¦ 10ml (2 teaspoons)

crushed garlic

¦ 10ml (2 teaspoons)

minced ginger

¦ 15ml (1 tablespoon)

soy sauce

¦ salt and pepper

to taste

INSTRUCTIONS:

Using a sharp knife, remove the outer skin of the pork chops.

Slice chops into thin strips.

In a large heavy-based frying pan, heat oil and fry pork strips until browned.

Remove and set aside.

Add vegetables, garlic and ginger to the frying pan.

Stir-fry for about 10 minutes.

Return pork strips to the pan and add soy sauce, salt and pepper.

Stir-fry for a further 20 minutes.

Serve warm over rice or mashed potatoes.
