Pork soup with samp and beans

Although winter is slowly making its way out, it is still a little bit chilly outside.

When it is cold outside our bodies tend to crave some soul food.

Try our hearty Pork soup with samp and beans recipe , it promises to not disappoint.

Pork soup with samp and beans

(Serves 4 – 6)

500g stewing pork

Salt, pepper and cooking oil

1 large smoked pork bone (optional) or a few smaller smoked bones

4 - 5 cups of mixed soup vegetables, chopped into pieces

(Use a mixture of carrots, onions, celery, potatoes and .tomatoes and add any of your favourite veggies, if you like.) You can also just use 1 packet of ready bought soup vegetables, peeled and diced

1 packet (500g) dried samp and beans (soaked in boiling water for 30 minutes)

3 chicken stock cubes

3 litre of boiling water

2 Tbsp (30ml) vinegar

2 Tbsp (30ml) sugar

1 bunch spinach, washed and chopped

For serving:

Thickly sliced bread, toasted

Butter or margarine

1. Season the pork pieces with plenty of salt and pepper.

2. Heat some oil in a large pot and brown meat all over.

3. Add chopped soup vegetables and cook until soft.

4. Add soaked and drained samp and beans.

5. Crumble over stock cubes and add water.

6. Cover pot with lid and simmer for 2-2½ hours or until meat and beans are tender (you may have to add a little more water if it begins to look too dry).

7. Add spinach, sugar and vinegar and simmer for ten more minutes.

8. Taste and season soup if needed. Serve with crispy toasted bread.

Cook’s tips:

  • Add any selection of additional vegetables to this soup.

    • If you can’t find smoked pork bones just add some bacon when browning the stewing pork.
