Portuguese Peri Peri chicken

Why go out this Friday ? Make the perfect portugues style peri-peri chicken at home with a recipe by Master chef SA's Deena Naidoo

Serves 4

1                      whole chicken

For the sauce/marinade

½ cup                          olive oil

3                                  cloves garlic, crushed

½                                 red pepper, deseeded and chopped into pieces

1 teaspoon                  oreganum

4 tablespoons              lemon juice

4 tablespoons              white vinegar

2                                  red chillies, deseeded and sliced

2                                  green chillies, deseeded and sliced

1 teaspoon                  paprika

1 teaspoon                  salt

  1. Cut through back of chicken on either side of the spine and remove neck and spine section.
  2. Flatten chicken by pressing down on breast side.

For the marinade

  1. Heat the olive oil, garlic, red pepper, oreganum, lemon juice and vinegar in a small pan.
  2. Simmer for 8-10 minutes.
  3. Remove from heat, add chillies, paprika and salt.
  4. Cool mixture then transfer to a blender.
  5. Blend to a fine puree.
  6. Marinate the chicken in this mixture overnight.
  7. Grill in the oven, over hot coals or gas flames basting frequently until golden brown and cooked through.
  8. Serve on a bed of seasoned Spekko Parboiled Long Grain Rice.
  9. Garnish with lemon wedges.
