Potato and broccoli soup

Thick and creamy lick-the-bowl good! This soup is loaded with potatoes and broccoli. A one-pot meal your whole family will love, ready in under 30 minutes.     Potato and broccoli soup

Ingredients:

750g potato’s peeled and cut into cubes

2 garlic cloves

2 liters (8 cups) chicken or vegetable stock

30ml margarine

450g broccoli florets

Salt and pepper to taste

Bring the potatoes garlic and chicken stock to a boil in a large saucepan. Simmer for about 15 minutes or until the potatoes are very tender. Transfer the potatoes with a slotted spoon to a bowl and add the margarine. Mash the potatoes. Add the broccoli to the cooking liquid and simmer until very soft.  Transfer the broccoli with a slotted spoon to the bowl of mashed potatoes and mash everything together. Add the mashed vegetables to the cooking liquid bring to boil and season to taste. Serve and enjoy Hot!
