Potato salad

Serves 10

2 kg potatoes

250 ml (1 cup) coriander or parsley leaves, chopped

30 ml (2 tablespoon) chilli powder

30 ml (2 tablespoon) cumin seeds, toasted

125 ml (1/2 cup) mayonnaise

125 ml (1/2 cup) fresh cream

salt and pepper to taste

Boil the potatoes in a large saucepan of water until tender. Leave to cool, remove the skins and cut into quarters. Put the potato quarters in a large bowl and add the coriander or parsley leaves, chilli powder and cumin seeds and mix lightly. Mix together the mayonnaise and cream and poor over the potatoes. Season with salt and pepper.

Leave to stand for a few hours before serving, to give the flavours time to develop.
