Quick Mexican rice

  A great dish you can make in 10 minutes if you have leftover cooked rice in the fridge.   Ingredients you will need 2 tablespoons oil 1 onion chopped 1 garlic clove crushed 1 red pepper chopped 2 green chilies deseeded and chopped 2 cups cooked rice 1 tin chopped tomatoes 1 tin red kidney beans, drained 3 tablespoons chopped fresh parsley   Instructions Heat the oil n a pan and fry the onion and garlic until soft. Add the pepper and chilli and fry until soft. Add the cooked rice and chopped tomatoes and fry five minutes. Add the beans and fry for another 5 minutes until everything is cooked through. Remove from the heat. Add the chopped parsley and serve warm.
