Sausage and tomato soup

Instructions 

In a large saucepan, heat oil and fry onion and green

pepper until soft. Add sausage slices and fry until

brown. Stir in tomatoes, stock, tomato paste, sweet

chilli sauce, basil, oregano, salt and freshly ground

black pepper

Bring to a boil. Reduce heat, then cover and simmer

for 20 minutes.

Sprinkle with cheese before serving. Serve with

crusty bread rolls.

¦ 45ml (3 tablespoons)

oil

¦ 500g beef sausages,

thickly sliced

¦ 1 onion, chopped

¦ 10ml (2 teaspoons)

crushed garlic

¦ 1 small green pepper,

chopped

¦ 1 small yellow

pepper, chopped

¦ 1 can (410g) chopped

tomatoes

¦ 750ml (3 cups)

vegetable stock

¦ 1 can (115g) tomato

paste

¦ 125ml (½ cup) Sweet

chilli sauce

¦ 5ml (1 teaspoon)

dried basil

¦ 5ml (1 teaspoon)

dried oregano

¦ Salt and freshly

ground black pepper to

taste

¦ 190ml (¾ cup) grated cheddar cheese
