Spinach and cheese topping

Serves 6 to 8

1 onion, chopped

30ml (2 tablespoons) oil

250ml (1 cup) cleaned chopped spinach

250ml (1 cup) grated cheddar cheese

2 tomatoes, peeled and chopped

1 egg

80ml (3/4 cup) plain yoghurt or mayonnaise

salt and pepper to taste

Fry the onion in the oil until soft. Add the spinach, cover the pan with a lid and steam for two minutes or until the spinach has wilted. Remove from the heat and add the cheese and tomatoes. Beat the egg and yoghurt or mayonnaise with a fork, and add to the spinach mixture. Season with salt and pepper to taste. Spoon the filling onto the dough base and spread with a spoon to cover the whole base. Bake for 30 minutes at 180°C or until the dough is cooked and the topping sizzles.

Tip: Make sure the topping is not too wet or runny; otherwise the dough will be soggy.

More toppings

• Mix tuna with fried onion and grated cheese and a little mayonnaise. Add gherkins and tomato if you like.

• Mix cooked chopped chicken with corn, chopped spinach and cheese. Add the egg and yoghurt mixture (see topping recipe).
