SPINACH AND FETA TAGLIATELLE

Ingredients you will need

250g tagliatelle pasta

Oil for frying

Garlic, crushed

Salt and pepper to taste

400g spinach, washed and finely chopped

2 teaspoons cream cheese

¼ cup cream

2 discs of feta cheese, crumbled

Instructions

Cook pasta according to the instructions on thepacket. Heat oil in a pan. Fry garlic and spinach together until tender and to yourliking. Keep an eye on spinach, as it burns easily – so keep stirring it every 2 minutes or so. Add cream cheese and cream and stir together well. Add salt and pepper to taste.

Gently toss in the pasta, making sure that everything is mixed together well. Sprinkle with feta cheese to serve.

Move! Tip Add a little olive oil to the pasta before you toss just to make it easier to mix, as the spinach mixture may have become clumped together because of the consistency of the cream cheese.
