Steamed chicken with avocado

Avocados are very nutritious and full of vitamins and minerals. They’re also in season now and not expensive. If you want avocados to ripen quickly, put them in a paper bag with a banana.

250 ml chicken stock

2 skinless chicken breasts, sliced into small pieces

Salt, pepper and lemon juice to taste 1 ripe avocado   Method

Heat the chicken stock in a pan and bring to the boil. Season the chicken pieces lightly with salt, pepper and lemon juice, and simmer gently until cooked. Leave to rest for five minutes before serving. While the chicken is resting, halve the avocado and remove the stone and skin. Slice into wedges. Serve with the steamed chicken
