Tomato & onion samp

This is a beautiful side dish you can serve with any meat or you can even enjoy it on its own for a healthy meatless, meal.

Serves 8

Approximately R3.20 per portion

2 cups samp, soaked overnight

Salt to taste

Knob of butter

2 tablespoons oil

1 large onion, chopped

3 tomatoes, peeled and chopped

Salt and freshly ground black pepper to taste

½ cup geated cheddar cheese (optional)

Drain the samp and cover with fresh water. Bring to the boil, lower the heat and simmer until cooked. Add salt at the end of the cooking. Drain and add a knob of butter. Keep warm. Heat the oil in a heavy bottomed pan and fry the onion until soft and translucent. Add the tomato and cook for about 10 minutes until a nice thick sauce has formed, Season with salt and pepper and stir into the samp. Add the cheese (if using) and stir through.

MOVE HINT: You can also add 2 tablespoons of finely chopped onions if you want.
