Tomato tart

Do you have tea guests or need an easy starter ? try this delicious tomato tart

Ingredients

  • 400g roll of puff pastry (thawed)
  • 500g oven dried tomatoes
  • Tomato and onion mix
  • 10g crumbled feta
  • Fresh rocket leaves
  • Salt and pepper to taste

Method

  • Gently roll out puff pastry and line 20cm tart tin
  • Prick the bottom with a fork
  • Put baking paper over the pastry and put dried beans in it
  • Bake for 20 min in a pre-heated over at 180°C
  • Remove baking paper and beans and bake  for 5 min
  • Mix juices of the oven dried tomatoes with the onion and tomato mix, salt and pepper. Bring to a boil then simmer until slightly thickened and cooked through
  • Smear tomato and onion mix onto the baked pastry base and arrange tomatoes and combed feta on the pastry and grill for 5 min
  • Garnish with fresh rocket and serve
