Tomatoes with tuna filling

Low-fat meal Serves 4

4 medium tomatoes

1 can (170 g) tuna, drained

250 ml (1 cup) cooked rice

30 ml (2 tablespoons) onion, chopped

30 ml (2 tablespoons) parsley, chopped

30 ml (2 tablespoons) lemon juice

30 ml (2 tablespoons) mayonnaise

salt and pepper

Slice the tops off the tomatoes and remove the flesh and seeds with a teaspoon. Mix together the tuna, rice, onion, parsley, lemon juice, mayonnaise, salt and pepper. Spoon the mixture into the tomatoes. Sprinkle chopped parsley over and serve as is or with wholewheat bread.
