Tuna patties

Serves 4

1 small onion, chopped

60 ml (4 tablespoons) margarine

1 thick slice white bread

125 ml (1/2 cup) full-cream milk

Salt and pepper, to taste

2 cans (170 g each) tuna, drained

1 egg

125 ml (1/2 cup) cake flour

Oil, for frying

Fry the onion in the margarine until soft. Meanwhile, soak the bread in the milk and mash with a fork. Add to the onion in the pan and season with salt and pepper. Add the tuna and stir to mix. Remove from the heat, add the egg and flour, and shape into patties. Fry in a pan in a little hot oil until golden brown and crisp on both sides and cooked through. Serve with potato wedges or on buttered rolls with lettuce, sliced tomato and grated cheese.

Tip

To make potato wedges: Slice a potato in half and then each half into three to four wedges. Drizzle with oil and sprinkle with your favourite spice mix. Bake at 180°C for about 40 minutes until crispy and golden brown.
