White Star quick with chutney chicken

Ingredients 

1 can of apricots or peaches

8 pieces of chicken (thighs and drums)

250ml (1 cup) fruit chutney

250ml (1 cup) mayonnaise

1 tsp (5ml) curry powder

4½ cups (1.125l) vegetable stock

1 cup (160g) White Star Quick

2 tbsp (30ml) butter

Instructions

1.    Preheat the oven to 180°C.

2.    Drain the can of fruit, reserving the syrup.

3.    Place the chicken pieces in an ovenproof baking dish.

4.    Mix the chutney, mayonnaise, syrup and the curry powder together.

5.    Pour over the chicken pieces and bake in the oven for about 35 minutes.

6.    Add the fruit and bake for another 15 minutes.

7.    In the meantime, mix 1 cup of stock with the White Star Quick to form a paste.

8.    Bring the rest of the stock to the boil in a pot.

9.    Gradually add the White Star Quick paste while stirring, using a whisk.

10.    Cook on high heat for 2 minutes, stir through the butter.

11.    Serve the chicken with pap mash
