So here I am, ready to make my fifth Potjie. So far so good, made a red Grapetiser pot, red wine, white wine and a lekker curry pot so far.
This weekend I'm doing the old white wine chicken and cream Potjie with sweet veggies.
Let that chicken soak up the wine for a few hours.
Takes about an hour this one, no time to be chilling around the pot for 3 hours.
Onions in, let em brown.Chicken in (without the wine yet).Mix em up and put the lid on till it's too hot to touch with a bare hand (unless you are a dutchie in which case just let a rooinek test it for you).
At this point you can decide whether you want to take the chicken and onion out or leave it in with the veggies. I like to just chuck in my veggies on top of the chicken, cut em thin so they cook through faster.
Sweet potato, carrots etc. I like them sweet veggies!Then chuck the mushrooms on top and ad the wine that was flavoring the chicken.
When the pot starts to make that awesome bubbling noise chuck in the cream (to taste).
Add your spices or whatever as you usually do. I try to only use salt if I can so that everyone can flavor their own plate with the different condiments and what not on the table.
