Microwave-meal magic

THIS chicken dish is another of Marie­ Bowker’s tried and tested microwave recipes, which serves four.

Chicken dish

Ingredients:1 kg chicken portions, legs and thighs1.25 litres (5 cups) boiling water1 chicken stock cube200g (1/2 cup) rice1 packet mushroom soup powder125ml (1/2) cup mayonnaise125ml (1/2) cup milk125ml (1/2) cup frozen peas1x125g tomato-flavoured potato chips1 Tablespoon finely chopped chives 2 Tablespoons finely chopped fresh basil (addition of herbs is optional)

Method:

• Place chicken into a deep (3 litre) microwave dish.• Add 2 cups of the boiling water, dissolve the stock cube in 1 cup of boiling water and add to the chicken.• Cover the dish with a microwave dome lid or wax paper and microwave for 40 minutes on 100% power, stir after first 20 minutes.• Remove the chicken from the liquid with a slotted spoon and keep aside to cool.• Add the rice to the liquid in which the chicken cooked, plus 2 cups of the remaining boiling water.• Microwave uncovered on 100% power for 15 minutes, stirring after first 7 minutes.• Stir in the mushroom soup powder, milk, frozen peas and chopped herbs if being used.• Cover the dish with lid or wax paper, microwave at 100% power for about 6 minutes until cooked and thick, stir after first 3 minutes• Bone the chicken portions and shred the flesh, add to the rice mixture add the mayonnaise and mix lightly • Crumble the potato chips in the bag, add 3/4 of the packet to the dish, mix through lightly, spoon the mixture into a shallow 1,5 litre (6 cup) dish.• Sprinkle the remaining chips over the top.• Microwave uncovered at 100% power for about 5 minutes to heat through.

Serve with mixed salad.
