Sweet vibes at Toti’s new restaurant

THE new restaurant at 22 on Rockview Road, Four Walls, held their official launch last week.

The new owner chef Wally Linda prepared a gourmet selection of excellent food, which guests enjoyed along with wine tasting, art and music.

“My vision for the restaurant is for it to be a place that consistently produces excellent food, service and a great environment that people can’t wait to get back to,” said Linda.

“I chose the name Four Walls because I would like my restaurant to be more than just four walls. I’m trying to make it a place where people would like to go to and I would like to create an environment where people feel at home and looked after, not just a place where you eat then dash out,” she added.

On opening night, guests agreed the atmosphere was effusive. They sampled Prego steak rolls, calamari and beef burgers, with the Prego steak roll topping the popularity list.

Chef Linda was born in Durban, and began school at Warner Beach Preparatory and completed it at Kingsway­ High School. She qualified at the International Hotel School, Westville Campus.

Her passion for cooking is a shared family tradition.

“Everyone cooks in my family, both my mom and dad love to cook and my aunt was an amazing baker,” she said.

Her friends describe her as being super passionate about food, kind-hearted and knowing how to go after what she wants.

“I believe in going for what I want and not be afraid to fail, to remain humble and always remember where I’ve come from.”

Linda also has a contagious funny side to her and believes in applying something she read in one of her favourite books - live your life trying to “reconnect your heart with the soul of the world”.

Her favourite food is chip and cheese sandwiches.

“You know the ones you make when you either don’t have any food in the house or you’re too lazy to cook, my favourite combination of chip and cheese are the Simba Mexican chilli chips and cheddar cheese with a little bit of mayonnaise,” she said.

She loves to cook anything and everything. “As long as I’m in the kitchen, I absolutely love everything I make, except baking, don’t ask me to bake,” she said.

Four Walls restaurant is open seven days a week, Monday to Thursday from 8am to 4pm, Friday and Saturday from 8am to 10pm and Sundays from 8am to 4pm.

“I do children’s cooking classes on Tuesdays, Thursdays and Friday from age six to 12. But I have recently been doing classes with an amazing little boy who is three years old on Thursdays. With the older kids we are doing more advanced stuff and with the little ones we do simple things like pizza and cupcake decorating. My classes are from 2pm to 3.30pm on Tuesdays and 2.30pm to 4pm on Fridays.
