EXPERIENCE a feast of culinary delight, “Carnival style” at the Liberty Midlands Mall Food Festival from Thursday, 29 September to Sunday, 2 October.

Get to watch some of the best chefs in the province teaming up with celebrities including Terence Pillay, well known TV personality and journalist, Shirdika Pillai, radio presenter from Lotus FM, Jane Linley Thomas and Sky Shabalala, radio presenters from East Coast Radio and Rory Petzer, East Coast Radio producer among others, who will be cooking in a state of the art, fully equipped kitchen sponsored by Aurora Interiors.

The top local chefs of the Food Festival Chefs Kitchen are all well respected in their relevant fields and are sure to entertain and amaze visitors.

First up is culinary artist Wayland Green from Granny Mouse Country House & Spa. The 32-year-old, originally from Glenwood in Durban, received his training through the Hotel Training Academy from 2002 to 2004, where he completed studies in Food Preparation, French, Food Costing as well as Food Theory. He has many years of culinary knowledge, having worked at Woodridge Country Estate, Figata Food Emporium, owned his own catering company and was head chef at Fudart until he was given the opportunity to work at Granny Mouse.

Returning for his second appearance is Alex Poltera, Executive Chef of Fern Hill Hotel in Hilton, and who includes in his number of achievements, being inducted into the oldest gastronomy society in the world, Chaîne des Rôtisseurs, awarded the Brass Blazon as well as being the youngest Maitre Rotisseur in the world. He is also the youngest member of Chaine des Rotisseurs in the world. In addition to running the kitchen, Chef Alex tutors students in Professional Cookery and has also written food and travel pieces for South African magazines; Ginja and Urban Life ‘n Style.

Third up, is Lorenzo Giliomee of Fordoun Hotel & Spa in Nottingham Road, a new addition to the culinary line up of great chefs, has cooked his way from Dan Hotel in Tel Aviv in Israel, as well as many local South African favourites, that of Sabi Sands, Ulusaba – Richard Branson’s Reserve, Ivory Tree Game Reserve in Pilansberg, Alpine Heath as well as Goodersons Monks Cowl, among others. He is a firm believer in working with great fresh produce, sourcing from local farms and his very own garden.

For those with a fondness for all things sweet, Dot Dicks, winner of the Great South African Bake Off, hails from Johannesburg and began baking two years ago when her sister in law asked her to bake a fruit cake for her nephew’s birthday. She will be there to show us how baking is really done.

A little more sweetness will take the form of Cheryl Govender from the Cake House, based in Prestbury, Pietermaritzburg, who creates and delivers cakes for any occasion, delivering to both Durban and the KZN midlands. Their extensive repertoire crafts unique cakes for every occasion.

There will also be something to keep the kids busy at the Junior Kids Zone. Boasting a kiddies cupcake area on Saturday and Sunday from 9am to 5pm, littlies will have the fun task of decorating their vanilla cupcake with tasty trimmings like silver balls, icing and other sweet niceties. Each cupcake purchased for R10 will see proceeds going to charity.
