Chickpeas are tasty, easy to prepare and nourishing. Here are some creative ideas to keep them interesting.

1. Chickpea salad

Mix 2 x 410 g cans chickpeas (drained), a handful chopped parsley, a handful chopped coriander, 60 ml (¼ c) olive oil, juice and zest of 1 lemon, 1 chopped red onion, 1 crushed garlic clove, 2 crumbled rounds feta cheese, and season with salt and pepper to taste. Serve with roast leg of lamb or braaivleis.

2. Quick hummus

In a food processor blitz together 1 x 410 g can chickpeas (drained), 60 ml (¼ c) olive oil, pinch ground cumin, 15-30 ml (1-2 T) lemon juice, 1 crushed garlic clove and salt to taste. Serve with pitta breads.

3. Chicken and chickpea bake

Season chicken pieces with salt and pepper and arrange them in an ovenproof dish. Pour a bag of tikka sauce over. Drain 1 x 410 g can chickpeas and spread among the chicken pieces. Mix, cover with foil and bake at 180 °C for 50-55 minutes. Serve with coriander couscous.
