3 Delicious ways with lentils

Packed with nutritional benefits, this cheap and delicious legume can be added to some of your favourite dishes. It’s a great replacement for meat and helps to keep your cholesterol levels low.

1. Lentil curry

Heat oil in a pot, add 1 chopped onion and sauté until golden brown. 2. Lentil burger patties

Take 1 tin of lentils (rinsed), 1 tin of chickpeas (rinsed) and mix together in a blender. Add the lentils and chickpea mixture, 4 mint leaves, a handful of fresh coriander and salt and pepper, and mix through. Add 125 ml (½ c) breadcrumbs and mix well. Form into burger patties and chill for 30 minutes in the fridge. Shallow fry until golden brown on each side. 3. Lentil soup

Boil 250 g of red lentils with 1 grated carrot, 1 grated sweet potato and 1 chopped celery stick.  Add 8 cups of vegetable stock and simmer for 10 minutes. Add 2 ml (½ t) paprika and salt and pepper, and simmer for a further 15-20 minutes. Garnish with croutons.
