3 Yummy ideas with leftover snoek

Cooked snoek that’s been in the fridge for a day is ideal for making delicious accompaniments to freshly baked bread.

  • Flake leftover snoek, add a can of tuna if you don’t have enough snoek and mix with flour and a little chopped onion, coriander and parsley. Shape into patties and chill. Arrange on a greased baking sheet and bake at 180 °C or until done. Serve with a sambal made with chopped tomatoes, onion, cabbage and coriander moistened with a little vinegar.
  • Blitz leftover flaked snoek with creamed cottage cheese or cream cheese and chopped parsley to make a paste. Season with salt and pepper and serve with wholewheat bread.
  • Fry a sliced onion in oil until soft. Add diced potato and a little water and heat until done. Season with salt and pepper and add a little vinegar. Add flaked leftover snoek. Heat through and serve on freshly baked bread.
