Apple pudding

  •  30 g butter
  • 250 ml (1 c) sugar
  • 3 eggs
  • 60 ml (¼ c) milk
  • 250 ml (1 c) self-raising flour
  • 5 ml (1 t) baking powder
  • 3 apples

Sauce

  • 10 ml (2 t) vanilla essence
  • 250 ml evaporated milk
  • 250 ml (1 c) sugar

Preheat oven to 180 ° C.

1. Beat the butter and sugar until light and fluffy. Add the eggs and mix well. Add the milk, self-raising flour and baking powder and mix well until the batter is smooth. Remove the apples’ stalks and cores and cut into thin slices.

2. Pour the batter into a greased ovenproof pan. Spread the apple slices evenly over the dough. Put in the oven and bake for about 35 minutes or until a skewer comes out clean.

3. Sauce Place all the ingredients for the sauce in a medium pot and bring to the boil. Pour the hot sauce over the pudding as it comes out of the oven.
