Bacon and bean casserole

Less than an hour to prepare this delicious recipe by one of our readers, Karen Carrick

Preparation time: 5 min

Cooking time: 25-30 min

Serves 4

15 ml (1 T) vegetable oil

1 onion, chopped

3 garlic cloves, crushed

5 ml (1 t) chopped ginger

250 g lean bacon, cut into chunks

1 green pepper

salt and pepper

250 ml (1 c) white wine

1 can (410 g) butter beans

3 baby marrows, cut into chunks

250 g mushrooms, roughly chopped

1 Heat the oil in a deep frying pan and fry the onion, garlic and ginger until the onion is translucent.

2 Add the bacon and fry for a further 5 minutes. Add the green pepper and cook for another 5 minutes.

3 Reduce the heat, season with salt and pepper, add the wine and simmer for 10-15 minutes.

4 Add the remaining ingredients and simmer for a further 10 minutes. Serve with rice.
