Bake fairy cakes

Kids love messing about in the kitchen and what could be better than cupcakes? Bake these fairy cakes with them and use the time spent together to catch up on what happened during the first term.

You’ll need:

  • 125 g flour
  • 1 teaspoon baking powder
  • 2 eggs, whisked
  • 125 g butter at room temperature
  • 125 g caster sugar
  • 1 teaspoon vanilla essence

Icing

  • 1 tablespoon water
  • 1 tablespoon icing sugar
  • 1 drop food colouring

Do this:

  • Preheat the oven to 190 °C.
  • Put a paper liner in each hollow of a muffin tin.
  • Sift together flour and baking powder.
  • Add the eggs, butter, caster sugar and vanilla essence to the flour mixture.
  • Beat with an electric beater until creamy. The mixture is ready when it easily drops off a spoon.
  • Drop a teaspoonful of mixture into each paper cup in the muffin tin.
  • Bake in the preheated oven for 20 minutes.
  • Remove from the oven and leave to cool.
  • Meanwhile mix various colours of icing in small separate containers. The recipe below makes enough icing for 4 fairy cakes.

Icing

  • Mix water, icing sugar and food colouring.
  • Drop a little icing in the middle of each cooled fairy cake and spread or twirl it.
  • Decorate the fairy cakes with something sweet such as cherries, sprinkles or silver balls.
